Kohlrabi, Apple and Mint Slaw

A light, fresh tasting slaw made with an underused cool season veggie. It is chock full of nutrients and is considered to be a great cancer fighting food from the cabbage family. The food processor works great for grating your veggies.

This recipe makes about 4 servings. It is adapted from a Martha Stewart recipe.

Ingredients

2 pounds kohlrabi, peeled and either grated or cut into matchsticks.

2 carrots, either grated or cut into matchsticks

1 1/2 cups of a crisp apple, cut into matchsticks

1 large lime, zest and juice 4 tsp zest

1/2 large orange, zest and juice 2 tsp zest

2 tbs olive oil

Salt

1/4 cup cilantro leaves, roughly chopped

1/4 cup fresh mint leaves, roughly chopped

Directions

Drain kohlrabi well after grating to keep slaw from being watery.

Whisk together, lime and orange juice, zest and salt with oil.

Toss with kohlrabi, carrot, apple and herbs.

Chill and serve.
