This is another tomato pie recipe that is delicious. It uses eggplant along with the tomatoes. Can you tell that we really enjoy tomatoes?
2 garlic cloves
1 cup bread crumbs
3 tablespoons butter
1 tablespoon pesto
Cheddar cheese, shredded
2-3 sprigs of fresh parsley
Peel and cube eggplant.
Boil till soft. Drain water & mash.
Add diced onions, garlic, bread crumbs, egg, melted butter, pesto and mix well.
Grease a pie pan and layer sliced tomato on the bottom of the pan.
Add eggplant mixture.
Layer another sliced tomato.
Add cheese and parsley.
Bake at 350 degrees F for about 30 minutes or until golden brown.
