Tomato & Bacon Pie

Summertime and ripe tomatoes from the garden;  it just can’t get any better! Tomato Pie is so good and if you love bacon this Tomato & Bacon Pie recipe is even better! It’s quick to make and so delicious!

Ingredients:

1 deep dish frozen pie crust or make your own

2-3 tomatoes, peeled and either sliced or chopped, your preference

1 medium onion, chopped

1/4 cup of sweet basil, chopped

1/2 cup bacon, cooked till crispy and crumbled

1 cup mayonnaise

1/2 cup cheddar cheese, finely shredded

1/2 cup mozarella cheese, finely shredded

Sea salt & freshly ground black pepper, to taste

After slicing or chopping your tomatoes salt them and place in a colander to drain off the excess liquid.  You don’t want your pie to be too soggy.

Bake your pie crust in a 350 degree oven till slightly browned, about 10 minutes.

In your pie crust layer your tomatoes, bacon, onions and basil adding pepper to the layers as you go.

Combine your mayonnaise and cheeses in a bowl mixing well.  Spread over the top of the tomato layers completely covering the top.

Bake at 350 degrees for about 30 minutes, or until golden brown

Notes:

Yogurt can be substituted for mayonnaise if you don’t like mayo.

Feel free to sub your favorite cheeses.

If you like a little spice add some chopped jalapeno to the layers of tomatoes and onions.
