This is a quiche that doesn’t have a crust so that those that are cutting out grains can enjoy. If you don’t have spinach feel free to substitute another green that you have such as kale.
Ingredients:
3/4 # bacon
6 eggs, beaten
1 1/2 cups heavy cream
salt & pepper to taste
2 dashes worcestershire sauce
Hot pepper sauce to taste
10 oz. spinach, steamed, drained and squeezed dry
1 1/2 cup cheddar cheese
1/2 cup chopped green onions
1/4 cup grated parmesan cheese
Brown your bacon, and after cooled chop into small pieces. In bowl put beaten eggs, cream, salt & pepper, worcestershire sauce, pepper sauce and whisk together. When tomatoes are in season cherry tomatoes are a good addition.
In bottom of greased deep pie dish layer spinach, bacon, cheddar cheese, onion and top with egg mixture. Sprinkle parmesan cheese on top. Bake in a 375 degree preheated oven until the eggs are set.
