Spinach and Squash Fritters

2-3 squash  (Squash can be cooked and mashed to use, or squash can be cut with a spiral cutter and then cut into short lengths and used). The uncooked squash will give a firmer texture.

1 cup cooked quinoa

2 cups packed baby spinach

1/2 cup diced red peppers

2 large eggs, lightly beaten

1/4 cup breadcrumbs

1/4 cup plain flour

1-2 cloves garlic, pressed

1/2 teaspoon chili powder

Salt and pepper to taste

3-4 tablespoons olive oil

 

Preheat oven to 375 degrees F.

Chop spinach into small pieces.

Stir together squash, quinoa, pepper, egg, breadcrumbs, flour, spinach and seasonings.

Form the mixture into balls and flatten to make patties and lay them on waxed paper.

Heat a large skillet with the oil until the oil shimmers.  Brown the patties on one side and then turn the patties and place the skillet in the oven and bake for 20-30 minutes.

Serve with any sauces that you might like. (hot sauce, chutney, pear relish, etc.)

Tip:  Uncooked patties can be layered in waxed paper and then foil and frozen.  When cooking the frozen patties you can start cooking them when they are still partly frozen.
