Ingredients 8 cups vegetable broth (or chicken broth would be good too) 6 cups chopped cauliflower 6 cups chopped shiitake mushrooms (be sure to save your shiitake stems to add to your ingredients when making broth) 2 cups chopped onions 1/2 teaspoon sea salt 1 tablespoon apple cider vinegar How to Make It Place all ingredients into a pot and bring to a boil. Reduce the heat and simmer for 20 minutes. When tender puree with immersion blender until smooth or use your blender to puree. Share
