Sausage Bacon Kale Chickpea Soup
Ingredients:
1/4 cup Olive Oil
1 large Onion (diced)
1 Red Pepper (chopped)
4 cloves Garlic (minced)
3 oz Bacon [3-4 slices] (cut into pieces and sauteed)
2 cans ChickPeas (drained)
2 cans Diced Tomatoes
1/2 cup Sherry (optional)
2 tsp Cumin
1 tbsp Paprika
4 cups Chicken Broth
2 tsp Thyme
2 tsp Oregano
2 large handfuls of Kale
1 lb Sausage (browned)
In a large soup pot, add together the Onion, Red Pepper, Garlic, and Bacon. Cook for about 7 – 8 minutes.
Add ChickPeas, Diced Tomatoes, Sherry (optional), Cumin, and Paprika to the pot. Cook 5 – 6 minutes.
Add Chicken Broth, Thyme, Oregano, Kale, and Sausage to the pot. Then add Salt/Pepper to taste.
Simmer for 20 – 30 minutes.
