A good cool weather meal that just shouts Fall.
Ingredients
2 t olive oil
4 t finely chopped fresh rosemary or 2 t dried rosemary
4 garlic cloves minced
Pork Roast (about 1 1/2-2 pounds)
1 1/2 t Salt
1/2 t black pepper
2-3 apples, quartered
2-3 sweet potatoes, peeled and cut into large chunks
Preheat oven to 475 degrees F. Combine olive oil with garlic, rosemary, salt & pepper. Place pork in roasting pan and rub with seasoning mixture. Roast till top of roast is golden brown, usually about 15 minutes. Toss apples and sweet potatoes in olive oil and arrange around the roast. Roast until the apples and potatoes are tender, usually about 20 minutes. Test internal temperature of roast. Should be 150 degrees F. If roast needs to cook more remove apples and potatoes so as not to overcook them.
