Any of the squash or zucchini can be used for this recipe. We really enjoy the Magda squash which has a nutty kinda creamy flavor. Just a few ingredients, actually just olive oil, cheese and squash and just about 10-12 minutes in the oven and you are ready to enjoy!
Parmesan Zucchini/Squash
Ingredients:
2-3 pounds squash or zucchini
Olive oil to toss the squash in
Shredded parmesan cheese
Herbamare or sea salt and black pepper to taste
Preheat your oven to 425 degrees F.
Wash and trim the ends of your squash.
Cut the squash lengthwise and then cut into slabs or wedges.
Coat with olive oil.
Dredge each in shredded parmesan cheese.
Arrange on a baking sheet.
Cook for approximately 10-15 minutes until the cheese is a golden brown. Watch it closely to be sure the cheese doesn’t burn.
