Cooking oil spray
1 bundle of mild mustard greens (Variety that we grow that is very mild)
1 large onion, chopped
3 cloves of garlic, minced
1 T olive oil
1 cup cottage cheese, drained
4 oz feta cheese, crumbled
2 eggs beaten
2 t Italian Seasoning
1/2 t black pepper
1/2 cup grated parmesan cheese
1 T butter
Preheat oven to 350 degrees.
Coat a 9″ pie plate with cooking spray.
Chop mustard greens into very small pieces. Steam till tender. Drain off any excess liquid.
Cook onion and garlic in olive oil till transparent.
Stir spinach, cottage cheese, feta cheese, eggs and seasonings into the onion mixture. Mix well.
Spoon mixture into pie pan.
Sprinkle with parmesan cheese and dot with butter.
Bake uncovered for 30-35 minutes.
Tips: Also good made with other greens such as spinach or kale.
