1 bunch kale, very thinly sliced
1 carrot, finely grated
1 small onion, thinly sliced
Dressing:
1 teaspoon honey
2 teaspoons red wine vinegar
3 teaspoons mayonnaise
Put all dressing ingredients into a jar and whisk together. If you feel that the dressing is too light you can double or triple the dressing recipe.
Mix the kale, carrot and onion together. Add the dressing. It is best if the salad sits for 15-20 minutes before eating.
Optional: add cooked bacon bits
