Kale Salad is a great way to add raw veggies to your diet. The addition of apples and cranberries to this salad adds a little sweet that makes it attractive even to those that aren’t in love with raw kale. Give this recipe a try! It’s quick and easy to make and makes a colorful, attractive healthy dish.
1 bundle kale (I love the Italian dino kale but other varieties are good too) ½ red onion, diced 1 apple, chopped ½ cup cranberries ½ cup nuts (pecans, pine nuts, walnuts, your favorite), chopped and slightly toasted 1 tablespoon sea salt Drizzle of olive oil Juice from half of a lemon
Wash and cut the kale into very thin ribbons, removing the thicker midrib.
Sprinkle the kale with sea salt, olive oil and lemon juice.
With your hands massage the kale with the added ingredients until it turns a really bright green.
Add the onion, cranberries and nuts.
Chill and enjoy.
