Kale & Arugula Salad

Salad

1 bundle kale

1/4-1/2 cup arugula

3/4 cup dried cranberries

2/3 cup grated carrots

1/2 cup chopped, toasted almonds

1/4 cup feta cheese

Vinaigrette

2 T lemon juice

1 T dijon mustard

1 T Mrs. Bragg’s Amino Acids (or sub soy sauce)

2 t minced shallot

1 garlic clove, minced

1/2 olive oil

2 t chopped fresh Italian Parsley

1/2 t salt

Black pepper to taste

Directions:

Whisk lemon juice, mustard, amino acids, shallot and garlic in bowl. Slowly add oil whisking to emulsify the mixture.  Stir in other ingredients.

Place washed greens in bowl.  Add other ingredients and toss.  Drizzle with dressing and top sprinkling of feta cheese.

Enjoy.
