Ingredients
6 slices of bacon, cut into inch long pieces
1/2 cup onions diced
1 teaspoon minced garlic
1 pound green beans, snapped or cut into 2 inch pieces
1 cup water
Salt & pepper to taste
2 Tomatoes, sliced
1-2 cups mozzarella cheese, shredded
Preparation
Cook bacon in a skillet with a lid until fat has started to render.
Stir in onions and garlic and let cook for about 2 minutes.
Stir in beans and water.
Let cook on low to medium until most of the water has cooked out of the beans and the beans are tender.
Season to taste with salt & pepper.
Top with slices of tomatoes and let cook on low for about 5 minutes or until the tomatoes start softening. Works best with the lid on the skillet.
Right before serving top with the mozzarella cheese and put the lid back on and let it melt.
