Ingredients:
2 bunches of dandelion greens, lightly chopped
5 cloves garlic, minced
1 red onion, chopped
3 ounces shiitake mushrooms, sliced
1/2 cup red cooking wine
4 tablespoons olive oil
Salt & pepper to taste
Preparation:
In a large skillet, heat the olive oil over medium heat.
Add the garlic and onion. Saute for 5 minutes, or until onions are translucent and lightly brown.
Add the shiitake mushrooms and cook for another 5 minutes until they have reduced and softened.
Add the dandelion greens, red wine, salt & pepper. Cover the skillet for about 7 minutes or until the greens have softened.
Serves 4-6 people.
