Fire Roasted Tomato Salsa

About a year or so ago Mike & I had some salsa that was the best that I had ever eaten.  We talked to them about how they made it and they laughed and said that the secret to the flavor was that the tomatoes and peppers were roasted over the fire to prepare them for the salsa. This week we decided to make some salsa this way.  We really didn’t use a recipe but decided to put it together with what we like. I have to say that it was delicious, even better than the salsa that we remembered.

Fire Roasted Salsa

4-5 sweet peppers (just depends on the size)

1-2 jalapenos

4-6  medium tomatoes

1 onion, chopped

Juice from 1 lime

1 fig to add a little sweet

Cilantro to suit your taste

Salt to taste

Directions:

Place your peppers and tomatoes on the grill and roll around till the skin is blackened.  Place the peppers in a paper sack and fold it down to keep the steam in.

The tomato peels will just fall off as you are moving them on the grill.  After the peppers have steamed take them out of the bag and peel off the outer skin and then remove the stem and seed.

Drop all ingredients into the blender and pulse till everything is blended.  We didn’t blend ours till smooth but still wanted to see the little pieces of cilantro and onions in it.
