Delightfully Different Red Cabbage

This recipe for cabbage is quick to make but is full of so much flavor. It will be a favorite that you will use over and over.

 

SPICED SAUTÉED RED CABBAGE WITH CRANBERRIES

Serves 4 to 6

1lb. red cabbage, cut into 4 sections and cored

1 tbs. groundnut oil or vegetable oil

1 medium onion, chopped

1 large garlic clove, finely chopped

1/3 tsp. powdered cloves

1/3 tsp. powdered cinnamon

1/3 tsp. nutmeg

1 tbs. heaped – brown sugar

1 ½ tbs. red wine vinegar

4 oz. cranberries

Salt and pepper to taste

 

Shred the cabbage finely into 1/4 “ shreds, discard any tough stalky bits. Heat oil in pan over medium heat, stir in onion, cook for 2 – 3 minutes, then add garlic and continue to cook for another 2 – 3 minutes. Turn heat up to high and add cabbage. Keep the cabbage constantly moving so it comes into contact with hot pan on all sides.

After about 3 – 4 minutes of cooking, still stirring, sprinkle in the spices, season with salt and pepper then add cranberries. Turn heat down and let it cook for a further 5 – 10 minutes depending on how cooked you like the cranberries, stirring once or twice. Check a piece of cabbage to see if it is tender, when it’s ready turn the heat up, sprinkle in the sugar and vinegar, give a few more good stirs and you are ready to serve.
