1 onion chopped
1 bell pepper, cut into strips
6 pork chops, bone in
2 T Italian Seasoning
4 cloves garlic, minced
1/2 t sea salt
1/2 t black pepper
2 14 ounce cans of diced tomatoes
2 T balsamic vinegar
2 medium zucchini, cut lengthwise and into 1-2″ pieces
Put pepper and onion into slow cooker or crock pot. Layer in half of pork chops and sprinkle with seasonings. Repeat with another layer of pork chops and seasonings. Top with tomatoes in juices and vinegar. Add zucchini.
Cook on low heat for 8-9 hours or high heat for 4 to 4 1/2 hours.
Serve over rice or your favorite pasta. We enjoy it over orzo.
