Cucumber Tomato Onion Salad
It’s cucumber season with lots of varieties available just waiting for a delightful way to be served to your family. I’m always looking for easy quick recipes that are nutritious and tasty. This is a recipe that we use often because it is simple, can be eaten all along during the week and is oh so good! You can use a variety of herbs to change it up for different flavors.
Cucumber Tomato Onion Salad
Ingredients:
1 cup diced fresh tomato
1/4 – 1/2 cup diced red onion (During vidalia onion season I use them for a sweeter flavor)
1 cup diced cucumber
1/2 cup olive oil (EVOO)
1/2 cup red wine vinegar (Can also use Mrs. Bragg’s Apple Cider Vinegar for more probiotics)
Salt & Pepper to taste (I use about a teaspoon of each)
Herbs for flavor: Choose one of this if you like to add different flavors. I use about 3 teaspoons of one of these minced. Adjust for your preference.
Fresh dill
Fresh cilantro
Fresh basil
Directions:
Toss all veggies with vinegar and oil. Season with salt & pepper and herb of your choice if you like. Best if refrigerated overnight or at least an hour before serving.
