Boiled Eggs-Steamed Not Boiled
Have you ever had those times when you were making deviled eggs and when you went to peel your boiled eggs the whites stuck to the shell, they looked terrible and you were just plain frustrated. I have a solution for you. Steam the eggs instead of boiling them. Even if the eggs were laid that day they still peel perfectly.
What you need:
Farm fresh eggs
Steamer (I use a bamboo steamer over a pot of water but whatever type you have will work)
Bowl of ice water
Directions:
Put your steamer over a boiler half filled with water.
Place your eggs in the steamer basket.
Bring to a boil and steam for 13 -15 minutes.
Remove from the basket and place in ice water for a minute or two.
Roll the egg around in your hand cracking the shell.
Under running water remove the peel starting with the large end of the egg.
It works every time even on fresh eggs.
