4 pork chops, about 3/4″ thick
2 t coconut oil or oil of your choice
1 T spice rub (See recipe below)
1 T coconut oil
1/4 cup dry white wine
2 apples, thinly sliced
1/2 cup chicken broth
Directions:
Rub pork chops with 2 teaspoons of coconut oil. Pat spice rub onto pork chops and then let be for about an hour.
Preheat a skillet over medium heat until hot. Add 1 T of coconut oil to coat the skillet.
Add the pork chops and cook for about 5-6 minutes per side until golden brown and the juices run clear. Remove the chops and cover to keep warm.
Remove the skillet from the heat and slowly add wine to the hot skillet and stir to scrape up any browned bits from bottom of skillet.
Return the skillet to the heat and add your apple slices and broth. Bring to a boil and simmer until the apples are tender and the broth has reduced down.
Return chops to the skillet and heat until chops are warmed through.
