Zucchini Noodles with Arugula Pesto and Cherry Tomatoes

Serves 4


2 large zucchini

2 tablespoons olive oil

1 cup cherry tomatoes

Sea Salt & Pepper to taste

Ingredients for Pesto

2 cups arugula

1/2 cup basil leaves

2 cloves garlic, peeled

1 teaspoon lemon juice

1/2 cup toasted walnuts

1/2 cup EVOO, or more as needed

How to Make It

To make the pesto, place all of the ingredients in a food processor except the oil. With the food processor running slowly pour in the oil until a thick paste forms.

Using a spiralizer make zucchini noodles.

Heat the oil in a saute pan over medium high heat. Add the cherry tomatoes and cook for 1-2 minutes to soften.

Season with salt & pepper to taste.

Add the zucchini noodles and cook 2-3 minutes to slightly soften. Take the pan off of the heat and stir in some of the pesto, adding more to your desired taste.

Mix to combine the tomatoes and pesto with the noodles.

Top with parmesan cheese if you like.
