The larger Magda Zucchini, described as a Middle Eastern variety of zucchini, are great for stuffing. The flavor of the squash by itself is kind of a sweet, nutty flavor. You can use different fillings for the sweet or savory flavors that you like. We enjoy using veggies with pork sausage for a great savory dish!
2 Magda Zucchini, cut in half lengthwise and the seed scooped out
1 pound Pork Sausage (try our sausage if you haven’t yet)
1 onion, diced
1 large sweet red pepper (or hot pepper if you prefer), diced
2-3 small paste-type tomatoes, chopped
1/2 cup bread crumbs
3 tablespoons fresh oregano, finely chopped or dried if you don’t have the fresh
Salt & Pepper to taste
In a bowl combine the chopped veggies with the sausage and bread crumbs
Sprinkle the cavity of the squash with your salt & pepper and the herbs.
Fill the cavity with the sausage and veggie mixture.
Bake covered in a 400 degree F oven till the squash is fork-tender.
The time will vary greatly depending on the size of the squash that you are using.
