Kohlrabi Apple Salad


If you have never tried that weird alien looking veggie called kohlrabi you need to. It is in the cabbage family, looks a lot like turnips and has a mild flavor and crunchy texture that is really good.

Try combining it with apples, carrots and onions for a really tasty salad.


2 medium sized kohlrabi

1 red onion

2 carrots

1 crunchy variety of apple

1/2 cup of chopped pecans or walnuts

1/3 cup dried cranberries


1/4 cup mayonnaise

2 teaspoons apple cider vinegar

1 teaspoon honey or sweetener of choice

How to Make It

Peel kohlrabi and dice it into small pieces or cut into thin strips

Add unpeeled apple, diced into small pieces

Add red onion and carrots, either diced into small pieces or thin slices

Combine all ingredients including chopped nuts and dried cranberries into a bowl

For the dressing

Whisk together mayonnaise, vinegar and sweetener. combine with the Kohlrabi mixture. Let chill and serve. It is even better the next day.
