Refreshing summer vegetables that can be kept in the refrigerator for a cool snack or a side dish for your meal.
4 cucumbers, thinly sliced
1 large sweet pepper or 2-3 medium to small. Using different colored peppers makes a pretty presentation
1 medium sweet onion
1 cup white vinegar
1/2 cup snipped fresh dill
1/3 cup pure cane sugar or sweetener of your choice. Honey or stevia are good substitutions.
How Do I Make It
Mix vinegar, sweetener, dill and pepper together.
Stir in the peppers, cucumbers and onions.
Cover and chill in the refrigerator.
