A cool refreshing dish using your cucumbers while in abundance in the garden.
1/2 cup sour cream or plain yogurt
3 tablespoons white vinegar
1 tablespoon sugar or sweetener of your choice
Pepper to taste
4 medium cucumbers, thinly sliced
1 sweet onion, very thinly sliced
How to Make It
In a bowl whisk together the first four ingredients till blended. Add your cucumbers and onions. Cover and refrigerate till chilled. Best if you can let it marinade in the fridge for at least 4 hours.
Makes 8 servings.
