So delicious with some good bread. You can’t beat this dish made with fresh summer tomatoes for appetizers or a side dish. It’s sure to be a hit wherever you serve it.


Tomatoes – can be made with cherry tomatoes 2 pints, (beautiful if you use different colors of the cherry tomatoes OR use 5-6 medium to large tomatoes

1 tablespoon balsamic vinegar

Sweet Basil Leaves, about 16 leaves (may need more after tasting), cut into chiffonade

Small red onion, finely minced

5-6 garlic cloves, finely minced or pressed through garlic press

Salt & pepper to taste

1 loaf of crusty bread or a baguette

Olive oil

How Do I Make It

If using cherry tomatoes cut them in half

If using large tomatoes dice

Add tomatoes, basil, onion, garlic, balsamic vinegar, and salt & pepper to a bowl. Taste to adjust the seasoning. May need more basil or salt.

Cut the bread into diagonal slices and top liberally with olive oil

Grill the bread on both sides until toasty

To serve top the crusty bread with the tomato mixture.
