Baba Ghanoush is a tasty roasted eggplant dish. It is a Middle Eastern dish that is similar to hummus. It is delicious to use as a spread on your wraps or to use as a dip with your pita chips.
1 large eggplant or 2-3 asian type
4 cloves garlic, peeled and coarsely chopped
1/2 tablespoon cumin
1 tablespoon tahini
2 tablespoons fresh lemon juice
Salt to taste
How to Make It
Preheat oven to 400 degrees fahrenheit
Prick the eggplant all over with a knife and put on baking sheet and into the oven
Bake until the eggplant is shriveled and very tender. It will feel very soft to the touch (usually takes at least an hour)
Let the eggplant cool and cut in half, scraping all the pulp from the skin
Add the pulp to your food processor bowl, along with the garlic, cumin, tahini, lemon juice and salt. Puree until smooth and creamy.
Refrigerate in a covered dish.
Variation: Add 1/2 cup dried tomatoes (not the ones in oil) to the food processor before pureeing.
