Pesto is typically made with Sweet Basil but if you are looking for something different try this Arugula Pesto.
2 cups arugula
1/2 cup basil leaves
2 cloves garlic, peeled
1 teaspoon lemon juice
1/2 cup toasted walnuts
1/2 cup EVOO, more if needed
How to Make It
Put all of the ingredients except the oil in a food processor and process adding the oil slowly while the processor is running. It will make a thick paste.
Serve with chips, veggies or as a spread for your sandwich.
